Bacon and Date Angel Biscuits with Maple Glaze
Fluffy buttermilk biscuits get an added flavor boost from a bit of yeast, and the most addictive sweet/savory bacon date filling. A drizzle of maple glaze and a handful of crunchy toasted almonds take these angel rolls completely over the top!

Superbowl weekend is upon us. Are you ready? Do you have your menu planned and your recipes bookmarked? Well, before you head out to do the food shopping I’ve got one more for you add to the list.
From the moment I first tried Angel Biscuits on my Iowa trip back in October, I knew it was only a matter of time before they happened in my kitchen. The ones I had were filled with candied cherries and nuts and coconut, and they were a sweet-tooth’s dream. I absolutely fell in love with the light and tender texture of the dough, with that little added hint of yeasty flavor and gooey-ness.
But since I am always a sucker for a little sweet-savory action, and since I am on a “masculine desserts” kick, we are embracing that old “everything’s better with bacon” mantra today.
My hubby asked me last night, as these were coming out of the oven “when are you supposed to eat these anyway.” I had to stop and think for a minute. Are they a dessert? Are they a breakfast? Or a snack?
Guess what? They’re all of the above! And anything in between! You’re totally covered because you’ve got fluffy bread, chewy dates, smoky bacon, sweet maple glaze, and crunchy, toasty almonds here. You really can’t go wrong.
If you have ever had that trusty, old-standby appetizer known as “Devils on Horseback,” aka: bacon-wrapped dates stuffed with whole almonds, then you already know what a winning flavor combination this is. It hits on all flavor cylinders, foodie friends. So totally addictive!

Bacon & Date Angel Biscuits with Maple Glaze
Ingredients
- 2 1/2 cups (312.5 g) all-purpose flour
- 1/4 ounce active dry yeast, (1 packet)
- 3 tablespoons granulated sugar
- 1 teaspoon kosher salt
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 cup (113.5 g) unsalted butter, (1 stick), cold
- 1 cup (236.59 ml) buttermilk
- 1/2 cup (56.5 g) cooked bacon, (approx. 5 slices thick-cut bacon, crumbled)
- 1/2 cup (73.5 g) dried dates
- 3/4 cup (90 g) powdered sugar
- 1/4 cup (59.15 ml) pure maple syrup
- 1/2 cup (71.5 g) whole roasted almonds,, roughly chopped
Instructions
- Place the flour, yeast, sugar, salt, baking powder, and baking soda in a large bowl and whisk to combine.
- Using a pastry blender, cut the cold butter into the dry ingredients, until the butter pieces are pea-sized.
- Fold in the buttermilk, gather the dough into a ball, and place it in a lightly oiled bowl. Cover, and chill for 2 to 24 hours.
- Line a 9-inch springform pan with a circle of parchment.
- Transfer the dough to a lightly floured surface, and roll out to a rectangle approximately 15x12 inches.
- Scatter the bacon and dates over the surface, leaving about a 1/2-inch margin on all 4 sides.
- Fold the dough into thirds, like a letter, long-ways. Pinch to seal.
- Cut equally into 10 portions. Fold each in half, in a U-shape, and place cut-side-up in the prepared pan.
- Allow the rolls to rise in a warm place, for about 1 hour.
- Preheat the oven to 325 degrees F, and bake the biscuits for 30-35 minutes or until golden around the edges and firm in the middle.
- Stir the powdered sugar and maple syrup together. Drizzle the glaze over the biscuits and top with almonds. Serve warm.
